Soybean Polysaccharide Improves Fiber Content in Dairy Products

According to the US Nutrition Network August 20 news, scientists claim that three kinds of dairy products that can increase dietary fiber in large quantities have been developed.

Dietary fiber intake can bring many benefits, including: reducing blood cholesterol, reducing the risk of diabetes, and improving bowel movements. Many people's dietary fiber intake is much lower than the recommended intake. However, the addition of large amounts of dietary fiber to dairy products poses technical challenges as it may affect the texture of the product.

One way to solve this problem is to find a source of low viscosity fiber. A newly published Journal of FoodScience published a study by researchers from the University of Quebec, Canada. They tested the properties of soluble soy polysaccharides (SSPS), low viscosity fibers obtained from refining and extraction from okra.

The researchers added SSPS to three different dairy products (milk drinks, puddings, low-fat ice cream).

The method of measuring rheology and sensory detection is used to detect the added product. From the above test, it can be found that the maximum addition amount of SSPS in the milk beverage is 4%, and the maximum addition amount of SSPS in the pudding to which K-carrageenan is added is 4%, and in the low fat ice cream, it is 2%.

According to the researchers, the amount of soluble fiber added in these products is much higher than the amount of dietary fiber added in commercially available fiber-reinforced foods, which can improve the proportion of fiber in the consumer's diet.
