Lobster slice production process

Lobster slices are made by seasoning fresh fish with starch and various seasonings, then steaming, drying, and dehydrating the mixture. To begin, select fresh fish, remove the head, tail, and internal organs, then wash thoroughly. Take approximately 50% of the net meat. The recipe includes 45 kg of starch, 5 kg of fish, 1 kg of monosodium glutamate, 1.65 kg of sugar, 1.15 kg of salt, and 250 g of cinnamon (combined with 250 g of licorice and 250 g of star anise per 1 kg). Another 5 kg of starch is mixed with 19 kg of water and beaten into a smooth paste. Next, combine the raw fish ingredients, seasonings, and the prepared slurry. Stir continuously while heating until the mixture becomes hot, thick, and clear. If desired, add food coloring to achieve the preferred color. Then, blend all the ingredients together using a mixer. Gradually add the hot slurry while beating for about 20 minutes, ensuring a uniform consistency. Transfer the mixture into a wooden box, cover it with a cloth, and let it rest. Afterward, cut the mixture into thin slivers on a wooden table, ensuring they are strong and free of holes. Each slice should be approximately 5 cm in diameter. After cutting, place the slivers on a steamer rack and cook for about one hour. Then, leave them on a cooling surface for 12 hours to set. In the cooling stage, transfer the cooled slivers into a refrigerated chamber maintained at 0–2°C for around 30 hours. Once the slivers have hardened into a firm shape, use a slicer to cut them into thin slices, about 1 mm thick. Finally, dry the slices using air, sunlight, or a drying machine until they reach the desired texture. This process results in a delicious and marketable lobster slice product that can be sold in local markets or online. With low production costs and high demand, this is a promising venture for small-scale producers.
